Tiramisu from Florence, Italy

Denny and I learned how to make authentic tiramisu from an Italian cooking class we took at the In-Tavola Cooking School near the Ponte Vecchio Bridge in Florence Italy. This was the best tiramisu ever and very easy to make.

2 eggs, separated
5T sugar
1 cup mascarpone cheese
Lady fingers
Brewed coffee
Cocoa powder

Whip together the egg yolk and sugar until blended. Beat egg whites with a mixer in a separate bowl until firm but not stiff. Add Mascarpone cheese to whites. Fold the egg whites into the yolk mixture. Dip the lady fingers in a cup of coffee, but do not soak them. Layer the lady fingers and cream mixture in small individual bowls, ending with the cream. Sprinkle cocoa powder on top. Chill for at least 1 hour before serving. Serves 6.
