Mom's Turkey Stuffing

My childhood memories of Thanksgiving include the wonderful aroma of my mom's turkey roasting in the oven. She made the best stuffing, a recipe that originated with my grandfather Yoshitomi Shimomura. Pictured here are my dad and mom at their 50th wedding anniversary.

3/4 lb bacon, chopped
1 onion, chopped
2 celery stalks, chopped
1 sweet potato, skinned and diced
1 loaf of sliced white bread, cubed
1-2 tsp sage or poultry seasoning
3-4 tsp dried parsley
Salt and pepper, to taste
1 can chicken broth

Fry the bacon and drain. Remove some of the bacon grease. Sauté the onion, celery and sweet potato for a few minutes until tender. Add the bread cubes and seasonings. Moisten all with the chicken broth. Stuff the turkey and cook according to directions for stuffed turkey.
