I like this meatloaf recipe as I typically have most of the ingredients on hand. Dana's Barbecue Sauce tastes great as a topping, or if you get lazy, you can just pour ketchup over the meatloaf before baking. This is totally comfort food!


1 lb. ground beef
2 pieces stale bread, torn into small pieces
½ cup oatmeal
¼ cup onion, finely minced
1 egg
2-3 splashes of worcestershire sauce
Salt and pepper, to taste

½ c ketchup
2 tsp mustard
2 T brown sugar

Mix ground beef, bread chunks, oatmeal, egg and seasonings together, and with your hands shape it into a oblong mound. Place in a lightly greased baking pan. Mix topping ingredients and pour on top of the meatloaf. Bake 350 degrees for one hour. Serve a slice of meatloaf over mashed potatoes and sprinkle a few canned French fried onion rings on top.
