Mazen and Mary Lou's Hummus

I always looked forward to Mazen’s homemade hummus that he and Mary Lou served at their annual holiday parties. It's the best I've ever had. Pictured here is Mary Lou Dunford, my former manager of Vienna, VA.


1 can garbanzo beans (chickpeas)
½ lemon (large size)
2 T tahini
1 clove garlic, minced
Paprika to garnish
Extra virgin olive oil

Rinse the chickpeas with water and place in a food processor and chop until finely ground. Add the lemon juice, tahini, minced garlic and salt and puree until smooth. Add a spoonful of water until it reaches a soft dip texture. Pour into a serving bowl, sprinkle paprika on top and drizzle a little olive oil on top. Serve with sliced pita bread.
