Laurie's Pacific Rim Burgers with Ginger Mayo

This awesome burger can be made with ground chicken, turkey or beef. It has a nice Asian fusion blend of flavors. It's so good! The recipe comes from my friend, Laurie Levenson, of Oceanside, pictured here enjoying a little Chimay after a hard day's work.
1-1/4 lb. ground chicken
2/3 cup panko bread crumbs
1 egg, beaten
2 green onions, chopped fine
3T cilantro, chopped (use more)
1 clove garlic, minced
1-2 tsp Asian hot chili sauce (to taste)
Fresh minced ginger (optional)

Ginger Mayo:
½ c mayonnaise
2 tsp pickle relish
2 tsp fresh minced ginger
2 tsp lime juice
1 clove garlic, minced
Dash Asian hot chili sauce

Mix burger ingredients and shape into four patties. Barbeque on the grill. Serve with ginger mayo. Delicious even without the bun.
