Corinne's Quiche

This quiche is to die for! The recipe is from Corinne Gooden, whom I've known since we were 12 years old. She is pictured here with her hubby Bill Lemire of Bainbridge Island. They host the absolute best parties. You should see the food she prepares. It is well worth the plane ticket to Seattle to sample her cooking.

One 9” pie crust (homemade or Pillsbury refrigerated pie crust)
1-1/4 cup Swiss cheese, shredded
¼ cup parmesan cheese, grated
4 large eggs, beaten
2 cups heavy cream
½ tsp salt
¼ tsp pepper

Mix cheeses, eggs, cream, salt and pepper and pour into unbaked pie crust. Add any of the following: cooked bacon or sausage, fried and crumbled; spinach leaves, chopped; fresh basil leaves, chopped; sun-dried tomatoes in oil (remove excess oil); fresh mushrooms, sliced, or whatever you like.

Bake at 425 degrees for 15 min. Reduce temperature to 350 degrees and continue baking for 35-40 minutes until set. Test for doneness. Let stand at 10 min. before serving.
