Chicken Cashew Salad

This salad is comprised of lettuce, chicken, cashews and chow mein noodles. I've never been a fan of crunchy chow mein noodles, but for some reason they taste great in this salad. The best part is the dressing as it resembles a Thai peanut sauce. With the cilantro on top, it is a very refreshing salad and a meal in itself. I've taken this one to potlucks, and it is a crowd-pleaser.

2-3 half chicken breasts, baked, deboned and shredded
5-oz. can chow mein noodles (crispy) – use half of the can only
½ head of iceberg lettuce, chopped
½ cup salted cashews
Cilantro to garnish

¼ cup creamy peanut butter
6 T salad oil
¼ cup soy sauce
¼ cup sugar
1 T white vinegar
2 tsp sesame oil
¼ tsp cayenne
2 T green onion, minced
2 T cilantro chopped

Layer on a large platter in the following order: ½ can of chow mein noodles, lettuce, chicken, cashews, dressing,
and then cilantro.
